Leftover Halloween Candy Bar Brownies

Candy Bar Brownies are loaded with chocolate, candy, caramel, and peanut butter. The combination of flavors makes for a rich treat that is perfect for using up all of that leftover Halloween candy!

Candy Bar Brownies from butterloveandcowboys.com

I love Halloween. Love it! It is one of my favorite holidays. Anything spooky and fun has my name written all over it. Apparently I have had a good influence on My Cowboy, because he admits that since I became his Mrs., he loves Halloween almost as much as I do ;).

Candy Bar Brownies from butterloveandcowboys.com

So back to these Candy Bar Brownies. They are super tasty! I am a little bit of a brownie-o-holic. Brownies of all sorts speak to my soul, so I enjoy creating fun and exciting versions to vamp up any regular ol’ brownie.  I found several variations on how to use Halloween leftovers to make Candy Bar Brownies and decided it was high time I came up with my own recipe.

Candy Bar Brownies from butterloveandcowboys.com

What is your favorite type of Halloween candy? Mine is anything chocolate, therefore having enough chocolate candy leftovers can be a little bit of a problem for me. My Cowboy and I could eat all the Reese’s pumpkins in the state. However, if we ate them all, we wouldn’t be able to make these brownies, so I will save a few.

I hope you enjoy your Halloween candy, but I also hope you enjoy these Candy Bar Brownies, so make sure you save some chocolate!

Ingredients
  1. -1 box brownie mix
  2. -1/2 cup melted butter
  3. -1/4 cup milk (buttermilk is best, but regular milk works fine too)
  4. -2 eggs
  5. -2-3 cups chopped candy bars of choice (I used Snicker's and Reese's)
  6. -1 11 oz bag Kraft caramels or caramel bits
  7. -1/4 cup cream (If you don't have cream, use 2 tablespoons milk)
  8. -2 cups milk chocolate chips
  9. -1 cup peanut butter
  10. -1 cup Rice Krispies cereal (optional)
Notes
  1. Preheat oven @ 350 degrees F. To make the brownie bottom, mix brownie mix with, butter, milk or buttermilk, and eggs. Place in a greased 9x13 pan and bake 22-25 minutes, or until a toothpick inserted comes out almost clean. I prefer my brownies just a little underdone.
  2. Remove brownies from oven and sprinkle the chopped candy bars evenly on top of the brownies.
  3. Once the brownies have cooled for at least 30 minutes, place unwrapped caramels or caramel bits in a microwave safe bowl with the cream or milk. Microwave in one minute increments, stirring between each one until caramel is fully melted. Pour caramel on top of brownies and spread evenly.
  4. Once the caramel layer has cooled and hardened, place peanut butter and chocolate chips in a microwave safe bowl. Melt in 30 second increments until fully melted, stirring between each increment. Stir in Rice Krispies, if using. Pour chocolate/peanut butter mixture on top of the caramel layer and spread. Let topping cool and harden completely. Enjoy!

Nutella Gooey Butter Cake

Nutella Gooey Butter Cake is an ooey gooey dessert bursting with chocolate flavor. It is so simple and quick to throw together. Plus it tastes good for days!

Nutella Gooey Butter Cake from butterloveandcowboys.com

I’ve seen many recipes and variations for gooey butter cake over the years. It sure seemed to be a popular treat so I decided to see what all the fuss was about. The traditional gooey butter cake seems to have been around a long time and I’ve always thought it looked delightful. Maybe the traditional recipe would have been a good place to start for testing out variations of this recipe, but I just couldn’t help myself and started with Nutella Gooey Butter Cake! Nutella made me do it.

Nutella is a love of mine. It is rich, it is sweet, it is chocolate, it is hazelnuts- many things I love. So why not just start there and jump right to Nutella Gooey Butter Cake? Now, I have intentions of eventually testing out other flavors, maybe someday I’ll even get to the original, but let’s start here. I wouldn’t say that Nutella Gooey Butter Cake is super strong on the Nutella flavor which may be a little bit of a bummer, but these bars were such a lovely texture and so chocolate-y that I decided that was OK.

Nutella Gooey Butter Cake was not only tasty, but so easy! It is the perfect make ahead dessert to take to a family gathering or potluck. We thought they were good on the first day I made them, even better on the second day, but they had to be best once we got to day three! I tend to travel with homemade dessert- almost every trip we go on, as long as we are driving. So a dessert you can make two to three days ahead of time that doesn’t get dry or old tasting is a win in my book.

For the Crust
  1. 1 chocolate cake mix (I used devil's food)
  2. 1/2 cup butter, melted
  3. 1 egg
For the Filling
  1. 8 oz cream cheese
  2. 1/2 cup butter, melted
  3. 3/4 cup nutella
  4. 2 eggs
  5. 3 cups powdered sugar
Instructions
  1. Preheat oven at 350 degrees F. For the crust, combine the chocolate cake mix, melted butter, and egg. Press into a greased 9x13 in pan.
  2. For the filling, combine the cream cheese, butter, and Nutella. Add the eggs and mix. Gradually add the powdered sugar. Pour filling on top of the crust and bake about 40 minutes. Be careful to not over bake. The edges should begin to brown and the filling should no longer be liquid, but will remain gooey and center may jiggle a little. Let bars cool completely and sprinkle with powdered sugar.
Notes
  1. These are a great make ahead dessert, because they taste best 1-2 days or more after baking. The texture becomes more moist and the flavors enhance over time.

Caramel Monster Brookies

Caramel Monster Brookies begin with a fudge brownie, are followed by creamy caramel, and finish off with a layer of monster cookies. Chocolate, caramel, and peanut butter; what’s not to love?

Caramel Monster Brookies by butterloveandcowboys.com

I have tried numerous brookie recipes and there are several combinations that I have found so tasty. However, Caramel Monster Brookies just might be my favorite version, because brownie, caramel, and monster cookie create one tasty combination. It can’t be denied that a caramel center and monster cookie layer set the bar pretty high. On top of all that, these layers create a moist and ooey gooey dessert. I love ooey gooey. Do you love ooey gooey?

So I suppose the combination of brownies and cookies in the blogging world isn’t new. Over the last five or so years, it has become popular to combine these two widely loved desserts. And boy do they go together well! Whether it be regular chocolate chip cookies or something a little more vamped up like this monster cookie version, brownies and cookies are a combination that never leave me disappointed.

Brownies, cookies, cookie pie, and now brookies have all been stuffed here on Butter, Love, and Cowboys. When you take a timeless recipe and stuff it, it just becomes something it wasn’t before. If you don’t believe me, just go ahead and try it. I dare ya.

Brownie Layer *(see note)
  1. 1 cup butter, melted
  2. 2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla
  5. 1 cup flour
  6. 3/4 cup cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
Caramel Layer
  1. 1 14 oz can sweetened condensed milk
  2. 1 11 oz bag caramels or caramel bits
  3. 4 tablespoons butter
Monster Cookie Layer
  1. 1/2 cup butter, soft
  2. 1/2 cup peanut butter
  3. 1/2 cup sugar
  4. 1/2 cup brown sugar
  5. 1 teaspoon vanilla
  6. 1 egg
  7. 1 cup old fashioned oats
  8. 1 1/4 cups flour
  9. 1/2 teaspoon baking soda
  10. 1/8 teaspoon salt
  11. 1 cup milk chocolate chips
  12. 1/2 cup white chocolate chips, optional
  13. 1/2 cup peanut butter chips
  14. 1/2 cup m&m's
Instructions
  1. Preheat oven at 350 degrees F. Make the brownie layer by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Place in a greased 9x13 inch pan. Bake about 25-28 minutes, or until the brownie layer is almost done but not fully.
  2. While the brownies are baking make the caramel layer by placing sweetened condensed milk, caramels, and butter in a medium sized saucepan. Melt and stir occasionally on medium heat until everything is smooth and well combined.
  3. Also while the brownies are baking, make the monster cookie layer. Cream butter, peanut butter, and sugars until light and fluffy, about 2 minutes. Add vanilla and continue to cream about 1 more minute. Add egg and mix. In a separate bowl, combine oats, flour, baking soda, and salt. Gradually add to wet ingredients. Mix in milk chocolate chips, white chocolate chips (if using), and peanut butter chips. Fold in the m&m's. (You can use any kind, but I used peanut butter m&m's and we loved it! Caramel ones would go well too!)
  4. Layer the caramel on top of the brownie. Next, scatter the monster cookie dough in teaspoon sized pieces all over the top of the caramel, until evenly distributed. Return to the oven for about 10-12 minutes, or until the cookie layer is baked through, edges will just barely begin to turn golden. When it comes to these bars, a little underdone is better than a little overdone! Let cool at least 20 minutes so the caramel has some time to settle. Enjoy!
Notes
  1. *I have used a brownie mix for the brownie bottom before and it turns out really well since brownie mixes are quite moist. The homemade brownie kicks it up a notch, but there is no shame in using a brownie mix for the bottom! If you do, just be aware you will have to adjust the baking time for the brownie before adding the caramel and monster cookie layers. It took about 18 minutes to reach that almost done, but a touch underdone state when I did it. If you do use a brownie mix, I recommend using butter instead of oil, milk instead of water, and adding some vanilla extract.

Chocolate Peanut Butter 7 Layer Bars

Chocolate Peanut Butter 7 Layer Bars are a gooey dessert with layer upon layer of both flavors melded into one delicious bar. They are quick and easy treat, sure to please a crowd.

Chocolate Peanut Butter 7 Layer Bars from butterloveandcowboys.com

I love seven layer bars. One of my first posts on this blog, was these Seven Layer Bars. They are always a yummy, versatile treat that you can really make any way you want. While I love the regular seven layer bars, I also enjoy experimenting with different kinds. As always, chocolate and peanut butter are my most favorite flavor combination, therefore I found it fitting to put them into a seven layer bar. Chocolate Peanut Butter 7 Layer Bars were created from these notions.

Chocolate Peanut Butter 7 Layer Bars from butterloveandcowboys.com

Chocolate Peanut Butter 7 Layer Bars are like a marriage of chocolate and peanut butter. The two flavors become one as they melt and mold together in the oven, creating a delicious bar. One of my favorite things about various versions of 7 layer bars or magic bars, whatever you like to call them, since they are basically the same thing, are their ooey-gooeyness. I love ooey-gooey.

I also love Oreo’s, butter, chocolate, peanut butter chips, peanut butter, Reese’s, and sweetened condensed milk…so basically everything in these bars!

Ingredients
  1. 1 package (14.3 oz) Oreo's (regular or peanut butter)
  2. 1/2 cup butter, melted
  3. 1 cup milk chocolate chips
  4. 1 cup peanut butter chips
  5. 8 full size Reese's, chopped
  6. *1 cup peanuts (Optional)
  7. 1 14 oz can sweetened condensed milk
  8. 3/4 cup peanut butter
  9. 1/4 cup cocoa powder
Instructions
  1. Preheat oven at 350 degrees F. Finely process the Oreo cookies. Mix the cookie crumbs in a medium size bowl with the melted butter until well combined. Press into a greased 9x13 inch pan to form the crust.
  2. Layer the milk chocolate chips, peanut butter chips, Reese's, followed by the peanuts (if using) over the crust.
  3. In a small microwaveable bowl, microwave the peanut butter until melted, this should take around 60 seconds. Add half of the can of sweetened condensed milk to the melted peanut butter and mix until smooth. No need to measure out the sweetened condensed milk into exact halves, just eyeball it. Place the remaining sweetened condensed milk in a small bowl and mix with the cocoa powder until smooth.
  4. Pour the peanut butter/sweetened condensed milk mixture over top of the bars, followed by the cocoa/sweetened condensed milk mixture. Bake about 25-28 minutes. Let cool at least fifteen minutes before cutting.
Notes
  1. *I don't like nuts in my bars, but if you do, I'm sure you would love them added to these bars! Technically, they aren't seven layer bars without the nuts :). I used some toffee bits instead of nuts, but I would prefer them without toffee...or nuts :).

Chocolate Scarecrow Bars

Chocolate Scarecrow Bars are a crunchy treat loaded with the combined flavors of chocolate and peanut butter. These are definitely part of the “just treats, no tricks” category. In my adapted recipe, this original Halloween dessert gets the most delectable makeover I could think of- a chocolate one.

Chocolate Scarecrow Bars from butterloveandcowboys.com

So I saw several recipes for Scarecrow Bars a year or two ago and set my heart on making them and sharing, if appropriate. By the way, “sharing, if appropriate,” is when My Cowboy and I both agree that a recipe is worth sending out on the worldwide web, because we each found it delicious! As I reread this recipe, I realized two things.

  1. Scarecrow Bars begin with a yellow cake mix. (And I immediately thought, “Isn’t there a way we can improve that?”)
  2. Scarecrow Bars crunchy rice crispy topping includes a decent amount of peanut butter, which I naturally translated to a more generous amount of peanut butter. (My mind raced to thoughts of my favorite flavor combination. “If there’s peanut butter, why not let there be chocolate too?!”)

Chocolate Scarecrow Bars were then born. These were a relatively easy treat that totally satisfied My Cowboy and I’s Halloween sugar fix this past weekend. Chocolate, peanut butter, and Halloween. It doesn’t get much better than that.

Ingredients
  1. 1 box devil's food cake mix
  2. 1/2 cup butter, melted
  3. 1 egg
  4. 2 teaspoons vanilla, divided
  5. 3 cups mini marshmallows
  6. 1/2 cup corn syrup
  7. 1/3 cup brown sugar
  8. 1/4 cup sugar
  9. 2/3 cup peanut butter
  10. 2 cups rice crispy cereal
  11. 1 cup almonds OR peanuts (I used slivered almonds)
  12. 1 cup candy corn
Instructions
  1. Preheat oven at 350 degrees F. Combine cake mix, melted butter, egg, and 1 teaspoon of vanilla. Mix well. Press into a greased 9x13 pan and bake 10-12 minutes or until set. Remove pan from the oven and sprinkle marshmallows over top of the cake/brownie layer. Move the oven rack closer to the top of the oven and bake bars an additional 1-2 minutes, until the marshmallows begin to puff up.
  2. As soon as you pull the bars out of the oven, begin working on the top layer. Do not let the marshmallows cool, or the topping will not attach to the bars and when cut, the top layer will come apart from the bottom. Combine corn syrup, brown sugar, sugar, and remaining 1 teaspoon vanilla. Stirring frequently, bring the mixture to a boil over medium heat, then remove from heat. Add peanut butter and mix until fully incorporated. Add rice crispy cereal, nuts, and candy corn. Mix well. Place mixture over top of the marshmallow layer. I found it easiest to drop it on top in tablespoon size heaps and then pressed the mixture together. Cool completely before serving. Enjoy!

Samoa Brownies

Samoa Brownies begin with my favorite, from scratch, fudge-y brownie. The brownie is followed by the traditional Samoa layers of caramel, toasted coconut, and a milk chocolate drizzle. Brownie, caramel, toasted coconut, and melted chocolate- why wouldn’t they be good?

Samoa Brownies from butterloveandcowboys.com

I love brownies. If you haven’t noticed, I post a lot of brownies in various forms. Girl Scout Samoa cookies are also a love of mine. These two loves of mine combined is a lot of happiness for my taste buds. Plus, let’s take a look at the hard facts. If I could only enjoy Samoa’s when the Girl Scouts are selling cookie boxes, then I wouldn’t be a happy camper, because it’s only a certain portion of the year. 2. 2 (11 oz) bags Kraft caramels or caramel bits
  3. 1/4 cup milk
Topping
  1. 1/3 cup milk chocolate chips

  2. 2. To prepare the Samoa filling, preheat oven at 375 degrees F. Stir every 3-5 minutes for about 10-15 minutes or until the coconut is browned. Watch closely so it doesn't burn. Remove from the oven and allow to cool while you melt the caramel. Place caramels and milk in a microwave safe bowl. Place in the microwave, stirring every 60 seconds. It takes about 3-4 minutes for the caramels to melt completely. Immediately toss in the toasted coconut. Stir until coconut is completely coated with caramel. Spread over cooled brownies.
  3. 3. Melt chocolate chips in a microwave safe bowl with the shortening. Reduce power to sixty percent. Microwave in 30 second increments until melted. Stir in between each thirty second increment. Drizzle melted chocolate on top of caramel and coconut mixture. Let the Samoa filling and chocolate topping harden. Enjoy!

Raspberry Truffle Brownies

Raspberry Truffle Brownies begin with a fudge-y brownie bottom and are followed by a chocolate raspberry filling. I first came across this recipe once upon a summer when I was in high school. My Mom often subscribed to Taste of Home and as I flipped through the pages, I stumbled upon these Raspberry Truffle Brownies. Summer and raspberries just go together so they immediately called to me. I made them a couple times and loved them, but completely forgot about them for many years until a month or two ago. I became reacquainted with the recipe online and knew I had to share them with you!

Reese’s Cheesecake Bars

Reese’s Cheesecake Bars are a delectable dessert that begin with an Oreo crust. The filling is a Reese’s loaded, peanut butter cheesecake. These beauties are then topped off with a fudge-y ganache.

I simply adore a chocolate and peanut butter loaded cheesecake dessert. So does My Cowboy. And that fact sure helps us get along swell. If we’re being honest, a cold piece cheesecake on a warm day is bound to help any marriage succeed.

Reese's Cheesecake Bars from butterloveandcowboys.com

Think about it. Aren’t you just in a better mood when you eat cheesecake? I sure am!

Significantly so. And My Cowboy is too. So I guess that’s it- after all these years we’ve figured it out. The secret to a successful and happy marriage is cheesecake. In particular these Reese’s Cheesecake Bars. I speak from personal experience when I suggest/prescribe these for marital bliss. This is huge.

Speaking of huge, these Reese’s Cheesecake Bars are just how I like them-piled high. Of course, cheesecake is a rich dessert, so a smaller piece goes a long way. Unless you’re me or My Cowboy, then it doesn’t.

Something I find humorous is when a recipe for an 8×8 inch or 9×9 inch square pan claims to yield 16-20 bars. What the hay?! Those are the yields of a 9×13 inch pan. At least my eight and nine inch pans don’t make that many bars. Just Today I looked over a brownie recipe for a 9×9 inch pan that claimed to yield 2 1/2 dozen bars. So that tallies up to 30 bars from a little square pan of brownies, maybe if we serve half bite bars…maybe?

  2. 3/4 cup sugar
  3. 1/2 cup peanut butter
  4. 1/2 cup sour cream
  5. 8 Reese's, chopped
  6. 2 eggs
  7. 1/2 teaspoon vanilla
For the Ganache
  1. 1 cup milk chocolate chips
  2. 2 tablespoons peanut butter
  3. 2/3 cup cream
Instructions
  1. 1. Preheat oven at 325 degrees F. Combine the Oreo crumbs and melted butter in a small bowl. Press into a greased 8x8 inch or 9x9 inch pan. Press into the pan with the bottom of a cup. Bake six minutes then remove from oven and let cool until filling is made.
  2. 2. For the filling, combine the cream cheese and sugar. Do not overmix. Add the peanut butter, sour cream, eggs, and vanilla. Mix until just combined. Fold in the Reese's chunks. Bake at 325 degrees F for about 45 minutes. I would check it at about 40 minutes to ensure it is not becoming over done. The middle will still jiggle a little, but the sides will be set. Once baked, cool in the fridge while you make the ganache.
  3. 3. To make the ganache, bring cream to a boil in the microwave. Place chocolate chips and peanut butter in a medium sized bowl. Pour the cream over top and mix until combined and all the chocolate is melted. Pour on top of the bars and spread. Refrigerate at least 4-6 hours. Enjoy!

Brownies and Bars

Cookie Dough Frosted Brownies

Cookie Dough Frosted Brownies are such a great go-to bar! Brownies are always a win and cookie dough frosting is so delicious. Any day that includes fudge-y brownies topped with creamy frosting is always a good day and I can’t say enough about this frosting! It basically rocked my world and what I thought I knew about frosting, in a good way.

Cookie Dough Frosted Brownies became a favorite of mine a few years ago. I generally avoid making the same treat over and over in a sequential fashion, but once my taste buds landed on this frosting, I just couldn’t help myself! It was too good, most especially for a cookie dough lover. I made many batches within the following month or two.

There is nothing like cookies hot out of the oven, but I’m not a huge fan of cold cookies, ya know, unless they are covered in frosting. Whenever I bake cookies around here, I usually bake just enough for what we plan to eat, refrigerate or freeze the rest of the cookie dough, and pull it out when we are ready for another batch of hot cookies. I guess I’m a little high maintenance that way, but if the cookies aren’t warm, I’d rather have the dough!

I may go as far as to say Cookie Dough Frosted Brownies are even better than cookie dough.  The frosting is light and fluffy and absolutely perfect to pile on any treat you want- brownies, cookies, cake, or just eat it plain.

I really like doing that too.

With a spoon.

Or a fork.

Spatula’s totally work too.

Or whatever utensil is easiest to grab.

For the Brownies
  1. 1 cup butter, melted
  2. 2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla
  5. 1 cup flour
  6. 3/4 cup cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
For the Cookie Dough Frosting
  1. 1/2 cup butter, soft
  2. 2/3 cup brown sugar
  3. 1 teaspoon vanilla
  4. 1/2 cup flour
  5. 2 1/2-3 cups powdered sugar
  6. *cream or milk, as needed for consistency
  7. 1 cup milk chocolate chips
Instructions
  1. Preheat oven at 350 degrees F. Make the brownies by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Bake 30-35 minutes. I prefer brownies a touch underdone rather than overdone. Let cool completely.
  2. For the frosting, place the butter, brown sugar, and vanilla in the bowl of a stand mixer and combine well. Add the flour and mix. Add the powdered sugar one cup at a time, mixing well between each addition. Add cream or milk as needed. I usually use about 3-4 tablespoons. Cream another minute or two. Add in the chocolate chips and mix until just combined, or fold in with a spatula. Frost cooled brownies. You may not want to use all of the frosting. I do as I love thick frosting, but frost the brownies to your preference. Enjoy!
Notes
  1. *I prefer using cream, because it adds a little richer flavor, but use whatever you have.
